You either loved it or hated it as a kid: Pea soup. Our “thick as fog” pea soup has been known to change minds (we think it’s the bacon). One of our simplest soups to make, just fry up bacon or ham while the soup simmers. Garnish with croutons or chives and try not to change your mind.
1) Add package contents to 8-9 C boiling water; simmer covered on low for approx 2 hr.
2) Dice and cook ham or bacon (remove all excess grease to avoid making soup too salty); add meat 15 min before serving. Soup thickens as it cooks. Season with salt and pepper.
Note: To make 3-4 servings, mix package in ziplock and use half of the contents.

Add 1 C diced onion and 2 TBSP oil to the Instant Pot and set to sauté. Sauté for 5-10 minutes until onions are translucent.
Add 8 C water and package contents, secure lid on and close vent, set to SOUP for 35 minutes then Quick Release.
Add 1-2 C diced cooked ham or bacon (be sure to remove grease or the soup will be too salty).
Secure lid and close vent and set to SOUP for 2 more minutes.
Quick Release and enjoy!
